Gluten-Free Banana Pancakes
I don’t think I’ve ever met a person who doesn’t enjoy pancakes. They really are such an indulgent breakfast or brunch, and a great option when you want to treat yourself or others.
This recipe is super simple and pretty healthy as pancakes go, as the batter is made up of 3 key whole food ingredients - eggs, bananas and oats. I like to add a bit of salt and cinnamon for flavouring as well. The result is fluffy, wholesome Scotch-style pancakes that are the perfect base for all kinds of toppings.
You will ideally need something to blitz the oats down to flour with - a blender or food processor works best. ⠀
TOTAL TIME: 10-15 minutes
SERVES: Makes 4-6 chunky pancakes⠀
SEASON: All seasons but particularly good on pancake day!
INGREDIENTS:⠀
• 1 ripe banana⠀
• 2 medium eggs⠀
• 1/3 cup oats (GF if necessary)⠀
• 1/3 tsp baking powder⠀
• Pinch of salt⠀
• 2 tsp cinnamon⠀
• Butter/coconut oil for frying

METHOD:⠀
1. In a large mixing bowl mash the banana into a pulp⠀
2. Mix in the rest of the ingredients thoroughly⠀
3. Heat the coconut oil/butter in a non-stick frying pan over a medium heat and spoon in the mixture based on your ideal sized pancake⠀
4. Cook for 2 minutes on each side until golden brown⠀
5. Serve with a delightful array of toppings. Think fruit, coconut yoghurt or authentic Greek yoghurt, cacao nibs, nuts, seeds, maple syrup, tahini, etc etc. ⠀ ⠀
