Avocado Chocolate Mousse

INGREDIENTS:

60g dark chocolate (I used 95%, I recommend minimum 70% cocoa solids)⠀
100g creamed coconut
125ml maple syrup⠀
1/2 cup cocoa powder⠀
1 1/2 very ripe avocado (peeled and de-stoned)⠀
1 tsp vanilla essence or paste⠀
Pinch sea salt

METHOD:

  1. Place a saucepan of water on a medium heat on the hob, and melt the chocolate in a glass bowl on top

  2. Add in the creamed coconut and stir thoroughly until combined

  3. Transfer the melted chocolate mix into your blender and add the maple syrup, cocoa powder, salt and vanilla, then blend

  4. Finally add the avocado and blend thoroughly before transferring to small glasses or ramekins

  5. Allow to set in the fridge for at least 2 hours before decorating and serving

  6. Decorate as you wish. I like to use a dribble of nut butter, blueberries, dessicated coconut and flaked almonds to add interesting textures. (It will taste bloody delicious without any toppings if you prefer to keep things simple).
